Aron Hershel was a California cannery owner, operating plants in the Santa Clara and San Joaquin valleys from 1920 through the 1950's. Hershel was an owner of Hershel California Fruit Products at Race and Moorpark in San Jose from 1920 to 1935. He then sold his San Jose holdings and built a new cannery in Lodi. He later operated the Aron Cannery Company in Stockton.

Hershel was born in Targu Okna, Romania in 1884. He emigrated to the United States in 1904, and lived in San Francisco and San Jose. He operated the German Cooperage Company at 117 Brazil St. in San Francisco in 1913. In 1920, he took over the Contadina Canning in San Jose. In 1910, he was living in Daly City (with his brother Morris and family at 38 Theta Ave.[1]. By 1925, he was living in San Jose's Rose Garden district on Fremont Street. By 1940, he was living in Stockton[2].

Hershel died some time before 1956; an Appeals Court case notes that the estate of Aron Hershel had sold the Aron Cannery Company to Tri-Valley Growers in 1956 for $1,000,000.
